# One Restaurant. Every Night.

Pappas Bros. Steakhouse · Dallas

2007. A Master Sommelier arrives at a steakhouse on Lombardy Lane. Barbara Werley. One of fifteen women in the world with the title. Fourth American woman ever to pass the exam. First woman to earn it in Texas. Her plan: "I'll probably come in and work every night even if I don't have to. I don't know that many people in Dallas quite yet."

Las Vegas's first female sommelier, at Caesars Palace. She left it. Her words: "I wanted to leave the big resorts and focus on a single, well-run restaurant with a great Executive Chef."

Waiting for her: 33,000 bottles. An 1847 Château d'Yquem among them.

The title cost her. A biology-and-French major who went another way. A job that followed her home: "I don't really drink a lot at home, because sometimes it seems too much like work."

She worked the floor for over a decade. The Wine Spectator Grand Award came in 2011. At the 25th anniversary, December 2023: World of Fine Wine's World's Best Long Wine List in North America.

What she built kept running. Jon Walker started here as a server and floor sommelier under Werley. Left for Manresa - three Michelin stars, California. Came back in 2023 as Wine Director. Rick Turner has run the room since around the 1998 opening. A rival wine director: "When we went into Dallas [in 2021], we knew Pappas Bros. was probably the leading wine destination in the city."

Dallas knows what the room is for. A 55th wedding anniversary. "We go 3 times a year, anniversary and birthdays." Susan always celebrates hers there.
