# Three Weeks in August

In July 2020, Texas Bleu went dark. The restaurant at 124 S. Main St. had served Keller since 2015; COVID-19 closed it, and with it the town's one fine-dining room.

Zack Moutaouakil had been in the restaurant business since 1981, starting at his father's restaurant in southern Spain. He managed downtown Fort Worth's Mercury Chophouse and bought it when the group agreed to sell. That August: "Downtown Fort Worth is not the same downtown I knew 25 years ago. The dynamics have changed. But what are you going to do - sit there and cry, or look for opportunities? It feels like we're holding our breath - we don't know for how long."

Then a question from Texas Bleu's owners. "The owners said, 'Do you know somebody who'd want to take this over?' My wife and I went up there to look at it and said, 'What about us?'"

Three weeks of renovation. The stacked stone wall that closed off the space came out; a framed LED light display went in. On Friday, August 14, 2020, mid-pandemic, Keller Chophouse opened, Troy Aikman at the grand opening. "Opening here, at this time, was a calculated risk," Moutaouakil said that September. "But we couldn't ask for better. Our customers are cleaning their plates, even the parsley garnish seems to disappear."

On August 14, 2025 - five years to the day - the room marked its anniversary. Diners praised the server Luke by name in December 2024 and again in July 2026. And the ribeye is still Allen Brothers, the Chicago beef Moutaouakil chose in a taste test and has trusted for 25 years.

Take an early table, or hold it for a birthday. Order that ribeye in the small room on Main Street - the dinner Keller used to drive to Fort Worth or Dallas for.
