# The Five-Dollar Lessons

On weekends a father drove his kids from Dallas down to the Texas coast to buy "the most beautiful fresh seafood, and things like shrimp, oysters, and fish." At home he smoked and barbecued, recreated restaurant dishes, and dreamed of owning a barbecue restaurant. He died when Richard Chamberlain was twelve, leaving his mother with four kids.

At fourteen, offered Future Farmers of America or the high-school cooking class, Richard asked: "Did I want to shovel manure or hang out with a classroom full of girls?" Cooking won. The Trail Dust Steakhouse grill line paid his way through school - three grill cooks, sixty waitresses. In late 1979 he reached The Mansion on Turtle Creek, made chocolate and Grand Marnier soufflés, and when the sous chef offered to teach him further recipes at five dollars a lesson, he paid.

The lessons carried him far from home: Los Angeles, San Simeon, fall 1989 as executive chef of The Little Nell in Aspen, and in 1992 a James Beard nomination for Best Chef in the Northwest.

In 1993 he came back and opened his own room on Belt Line Road, on Addison's restaurant row. Bon Appétit named it one of the country's top new restaurants that year.

Thirty-three years later it is still open and still his, and the fish of those coast weekends rides in the name: Chamberlain's Steak & Fish. One couple came back in 2024 for their 45th wedding anniversary. Another regular has "been coming several times a year for at least a decade." The waiters, one wrote, "even know us by name."

Whatever date you have been circling - the anniversary, the rehearsal dinner - give it to a room that has kept thirty-three years of them, where they will learn your name.
